Aloha from Maui,
You have lots of good answers here. I just have a couple more things to add.
I agree Humus at the Grand Wailea is a great place to eat. Make sure and make your reservation in advance. The best tables book up quickly.
I also like Nicks Fish Market at the Fairmont Kealani, or Mama's Fish House in Paia.
I would suggest you do a luau too. They are fun and you learn a lot about Hawaii and the different dancing from Tahiti, Samoa, and sometimes New Zealand.
If you want to venture out of the Wailea area and do some day trips by car Hana is really nice. It is our wet side of the island (raining there now as we speak) which is great for seeing rainbows and waterfalls.
Halekala Crater is our dormant volcano. Dress in layers if you go up here. It is 10,000+ feet in elevation so it is chilly up there year round.
Zip lining is fun! I have tried that a couple of times. Snorkeling is amazing.
There is so much you can do here in Hawaii! I just booked a clients tours and excursions for 2 weeks here in Hawaii (Maui and Big island of Hawaii) they are doing all of the above and more. But you have to book early as many of the more popular tours sell out weeks in advance.
Have a great time while you are here on Maui.

Odd as it seems, my favorite place for entertainment in Wailea is an Irish restaurant called Mulligans on the Blue on the Wailea Old Blue Golf Course. They have a wide array of live music in addition to a dinner show with Uncle Willie K. The Celtic Tigers are my favorite band playing 2 nights a week--great fun to listen to. Check out the schedule at http://www.mulligansontheblue.com/
The "Shops at Wailea" has “Wailea on Wednesdays” arts and entertainment series in July, featuring free music under the stars each week (6:30-8pm) in the center’s Lower Courtyard. Each Wednesday is further highlighted by art gallery receptions, artist appearances and one-night-only shop and restaurant specials. Check the schedule for who's playing the week you're there http://www.shopsatwailea.com/sales.html
Heading a short way up the road towards Lahaina is the Kealia Pond National Wildlife Refuge, free admission for a boardwalk stroll and Kanuimanu Ponds for bird watching. They have a new visitor center opening this fall. Maui Ocean Center, a great aquarium, is next in Ma'alaea. You'll have to check out Lahaina one day for the art galleries and shops in this old whaling town.
Be sure to go snorkeling or scuba diving at least one day and check out Haleakala National Park.
