$2 to 2.5k min. - that allows you $55-$70 a day, which for some cities will allow you to splurge and others you'll be scraping by (mainly price of hostels eats up your money). If you end up with money to spare - great, but I wouldn't feel comfortable traveling with any less and you get to enjoy it too. Hope that helps.

Not sure what your tastes are and I know you can get a lot of hints/tips from internet, but my faves would be of places that I've visited on your itinerary:
Paris - Louvre Museum, Eiffel tower, Seine river boat ride, Versailles Palace, Sacre Coeur district, Champs-Elysees.
Madrid - Prado museum, tapas, sangria
Barcelona - Antonio Gaudi architecture and the Sagrada Familia church, go for walks up little alleys and just look up - beautiful buildings and balcony's that you would otherwise miss; day trip to Sitges (beach)
Rome - wow too much! St Peter's and Vatican city will take your breath away; Spanish steps; Coliseum (and do either hire a guide or the portable tourist one); Piazza Navona; The Forum and Trevi Fountain.
Florence - Ufizzi gallery and walk over the bridges, have a drink (you'll pay for it though!) near the Ponte Vecchio
Prague - walk around the old town. View the castle from the St Charles bridge at night-time. Go to a market if you can.Look out for the old Budvar bar if it's still there?
Munich - of course you must go to Hofbrauhaus, very good fun. Great night-life in Munich too. Good art galleries - alte and neue pinakothek (I preferred the old one)
Amsterdam - hire a bike and get around the city that way. Van Gogh gallery was nice, it's not very large so is great for an hour or two. Canal boat ride.
